Legumes such as lentils are foods that should not be missing from the table. Its versatile way of preparing them can cause a sensation in all your presentations. Red lentil cream with pumpkin is the most fun way to prepare it, children love its color, aroma and pleasant flavor.

Red lentils are the most recommended for creams for the simple reason that they do not have skin, shell or skin. This condition makes the cooking time of this legume faster, 45 minutes is the time necessary for them to be soft and creamy. Then, blend or crush the lentils so that they acquire the proper texture.

INGREDIENTS

  • 200 gr. red lentils
  • Glass of white wine
  • 100 g of pumpkin
  • 100 g carrot
  • 1 garlic 1 chive
  • 4 mushrooms
  • 1 tablespoon parsley
  • 1 tablespoon cumin
  • 1 tablespoon turmeric
  • 1 liter Vegetable broth
  • Oil and salt to taste

 

ELABORATION

1. Peel, wash and chop the pumpkin and carrots.

2. We rinse the lentils and let them drain.

3. Chop the onion and garlic and sauté the first few minutes in a saucepan with oil, add the garlic, carrot and pumpkin.

4. Let them brown a little and add a pinch of cumin and turmeric. We pour the glass of wine, let the alcohol evaporate, and add the lentils.

5. Add the broth and let it cook over medium heat for 30 minutes or so, until the vegetables are tender.

6. We crush and check the salt level. Remove the earthy stem from the mushrooms, wash and cut into slices.

7. Sauté in a few drops of oil and when they are golden, present them on top of the cream.
