Today we present you a vegetarian recipe, special for lovers of healthy and natural food: it is the textured soy meatball , an ingredient that, at least, doubles the protein level of animal meat. Likewise, it surpasses the protein level of eggs and milk, all in exchange for a low calorie content. TEXTURED SOY VEGETARIAN MEATBALLS

Ingredients (approx. 15 units)    
  • 150 g fine textured soybeans
  • water
  • 1 small onion
  • 1 clove garlic
  • 2 teaspoons dried parsley
  • 1 level teaspoon oregano
  • 2 teaspoons Gomasium
  • ground pepper
  • 2 tablespoons soy sauce
  • 4 tablespoons breadcrumbs (can be more or less)
  • 4 tablespoons water (can be more or less)
  • flour
  • oil
  • salt
Preparation (90 minutes approx.): 1. Put the textured soybeans in a large bowl and cover it with water. Let it hydrate for about 30 minutes. 2. Chop the onion and garlic very finely and sauté until the onion is golden. 3. Drain the soy by pressing or drain it with a cotton cloth. Add the soy to the pan and mix well. 4. Add the spices, soy sauce and salt to taste. 5. Pour the dough into a bowl and add the breadcrumbs and water little by little, checking the texture. The dough has to be malleable. 6. Let the dough cool and form balls the size of a walnut. If the dough breaks when forming the meatballs, add more breadcrumbs and water. 7. Flour the meatballs and place them in the refrigerator for about 30 minutes so that they are more compact. 8. Fry the meatballs in hot oil. Handle the meatballs carefully so they do not break. Place the meatballs on absorbent paper to remove excess oil. 9. Meatballs can be served with sauce or alone as a complement to a salad. Enjoy!
