OATMEAL, COCONUT AND DATES PANCAKES

  Ingredients (4 pancakes)
  • 5 medjoul dates
  • 6 teaspoons of water
  • 2 eggs
  • 170 ml oatmeal vegetable drink
  • 2 teaspoons grated coconut
  • 135 g oat flour
  • 1/2 teaspoon baking powder
  • 2 medjoul dates
Preparation (30 minutes soaking + 30 minutes preparation approx.): 1. Cut 4 medjoul dates lengthwise and remove the stone. Cover the dates with water and leave for about 30 minutes. 2. Grind the dates together with 6 teaspoons of water until you obtain a cream. 3. Beat the eggs together with the date cream. 4. Add the vegetable drink and mix well. 5. Add the grated coconut and stir. 6. Sift the oat flour together with the yeast and add to the liquid mixture. Pour the oat bran that has remained in the sieve. Mix well with a spatula until there are no lumps. 7. Cut 2 medjoul dates into squares and dredge them in flour. Add them to the dough and stir carefully. 8. Heat a non-stick frying pan over medium heat. Put a few drops of oil in the pan and with the help of kitchen paper spread it well. 9. Pour a little of the dough and turn it over when bubbles appear on the surface. 10. Serve hot with fresh fruit, jam, chocolate, syrup, etc. Enjoy!
