TOMATOES STUFFED WITH BARLEY Ingredients (2 servings)
  • 30 g peeled grain barley
  • 2 beef heart tomatoes
  • 1 can of tuna
  • pitted black olives
  • oregano
  • salt
  • Apple vinager
Preparation (1 hour approx.): 1. The night before, soak the barley. 2. The next day, boil the barley for about 30 minutes with lightly salted water. Strain and let cool. 3. Cut the tops of the tomatoes and carefully empty them. Strain the pulp to remove excess water. Reserve the pulp. 4. Once the barley is cold, mix together with the tuna, tomato pulp, oregano and cut olives. Add salt to taste and vinegar. 5. Stuff the tomatoes and serve cold. Enjoy!
