This delicious and healthy recipe is ideal for the whole family and its preparation is extremely simple; you can present it as a side dish or as a single dish. The Ganxet bean is grown in Catalonia, it has the protection designation of the area, it has a smooth and creamy flavor. Its appearance is rough, white skin and its ends are hook-shaped, hence its name Ganxet (hook in Spanish). It is rich in protein, iron (even more than meat) and if you combine it with zucchini, eggplant, onion, garlic and red pepper as we show you in this recipe, you will get an exquisite dish full of vitamins, minerals and antioxidants, it will also satisfy you. completely to you and your guests Ingredients (4 servings)
  • 200 g Ganxet beans
  • 1 eggplant
  • 1 onion
  • 2 cloves garlic
  • 1 red pepper
  • 1 zucchini
  • water
  • salt
  • pepper
  • extra virgin olive oil
Preparation (8 hours soaking + 2 hours total cooking approx.): 1. The night before, wash the beans well, discarding any that are broken or have stains. Soak the beans overnight. 2. The next day, drain the beans and put them in a pot. Cover them with water and bring to a boil. When the water boils, add a little cold water to stop the cooking and lower the heat. When the water boils again, add a little salt and let it boil for about 50 minutes. 3. Wash and cut the eggplant into cubes. Fry the eggplant with a little oil and salt. Reserve. 4. Chop the onion and garlic and sauté. 5. Wash and cut the zucchini into cubes, add to the pan along with the onion and garlic. 6. Wash and cut the red pepper into cubes and sauté with the rest of the vegetables. 7. When the vegetables are tender, add the eggplant and mix. Adjust salt if necessary. 8. Drain the beans and add them to the pan. Mix well and add ground pepper. Enjoy!
