RECIPE MARINATED SALMON WITH PINK RICE

Ingredients (1 serving)    
  • 2 tablespoons soy sauce
  • 1 tablespoon of honey
  • 1 teaspoon apple cider vinegar
  • 1/3 teaspoon ground ginger
  • 1 salmon loin
  • 80 g pink rice
  • 200ml water
  • salt
  • green asparagus
Preparation (2 hours maceration + 30 minutes cooking approx.): 1. Mix soy sauce, honey, vinegar and ground ginger. 2. Place the salmon loin in a deep container and pour the marinade over it. Let it marinate for 2 hours, and turn the loin from time to time so that it is well soaked. 3. After 2 hours, clean the asparagus and cook them in a frying pan with a splash of oil and a little salt. 4. While the asparagus is cooking, heat a frying pan and cook the salmon over low heat. When the salmon is almost finished, pour in the marinade juice and cook for a minute. 5. Boil the water with a little salt. When it starts to boil, pour in the pink rice and leave it for about 10-12 minutes or until it has absorbed the water. 6. Serve the salmon accompanied with pink rice and green asparagus. Enjoy!
