Now is the time to grab a pencil and paper to write down the ingredients for our today's recipe, our dish of cabbage rolls with millet.
CABBAGE ROLLS WITH MILLET
Ingredients (5 rolls)
- 5 cabbage leaves (small)
- 1 onion
- raw and peeled sunflower seeds
- sultanas
- 1 carrot
- 50 g sweet millet
- 1 teaspoon ras el hanout
- salt
- oil
Preparation (1 hour):
1. Turn on the oven at 180ºC.
2. Fill a large pot with water and salt. Heat the water without letting it boil.
3. Wash the cabbage leaves and blanch them for about 2 minutes. Place the leaves in a colander and let them drain. Reserve half a glass of the cooking water.
4. Peel and chop the onion. Sauté it and when it starts to become transparent, add salt, the seeds and the raisins. Let it cook until the onion is golden.
5. Fill a saucepan with water and salt and bring to a boil.
6. Peel and chop the carrot into small cubes. Add to the saucepan when the water boils.
7. Wash the millet and add it to the saucepan along with the carrot. Add a teaspoon of ras el hanout to the water and boil for about 10 minutes or until the millet is tender. Drain, reserving half a glass of the cooking water and mix the millet and carrot with the onion sauce. Correct salt.
8. Stretch the cabbage leaves and put about two or three tablespoons of millet in the center of each one. Make a roll by folding the sides of the cabbage leaves and rolling from bottom to top.
9. Place the rolls in a frying pan or oven-safe container and pour half a glass of the water from boiling the cabbage and half a glass of the water from boiling the millet.
10. Put the rolls in the oven for about 20 minutes or until they turn golden brown.
11. Serve the rolls hot.
