The farm's bean stew with blood sausage and chorizo is a homemade dish, of humble origin shared from generation to generation, highly recommended in very cold times. It is a nutritious stew with high caloric value and a considerable percentage of fat.
Although this dish has clear records of its recipe and other procedures since the 19th century, it is believed that it has been present among us since approximately the 16th century with ignorance of its authorship. What cannot be denied due to its abundance of records is how delicious it is, thanks to the contribution of its main ingredients: beans, blood sausage and chorizo.
This excellent dish is accompanied by meat products derived especially from pork, which are incorporated into the preparation slowly. It has its preparation rituals and it is necessary to have 4 to 5 hours to make it, so take your precautions. Let's get started!
FARM BEANS STEW WITH BLOOD PUSSY AND CHORIZO
Ingredients (5-6 servings):
- 500 g farm beans
- 1 black pudding
- 1 chorizo
- 2 bay leaves
- 1 onion
- 1 clove garlic
- Sweet paprika from La Vera
- Rosemary
- Salt
Preparation (12 hours of soaking + 2 hours and 15 minutes of cooking):
1. Wash the beans and let them soak overnight.
2. The next day, put the beans, blood sausage, chorizo and bay leaves in a pot and cover with water. Bring to a boil.
3. When the water boils, add a glass of water and repeat this same step when the second boil starts.
4. Let it boil and after 15 minutes of cooking, remove the blood sausage.
5. After 30 minutes of cooking, remove the chorizo.
6. When the stew has been cooking for an hour and a half, add the sautéed onion, garlic, paprika and rosemary. Add salt to taste, taking into account that the blood sausage and chorizo already contain salt.
7. Let cook for another 20-30 minutes, or until the beans are tender but not broken.
8. Serve the beans along with the blood sausage and chorizo cut into slices.
