This delicious snack originates from England where it was used for the first time with the purpose of having food to cover the long journeys made by the colonizers of the time. In France, they maintain the recipe but not its form. They know them under the name ''Quatre quarts'' which refers to the proportions of their main ingredients. In Mexico they are called panqué and some parts of Latin America ponqué. All of these have been names that have varied the true and original name of the international pound cake.

The salty plum cake is a perfect cake to share with the family. It is a very easy dessert to prepare that should not be missed if you want to enjoy it with your guests. You can start the preparation in advance by reserving them in the refrigerator and when your guests are home, you can put it in the oven where it will take at least an hour to be ready.

SALTY PLUM CAKE

Ingredients
  • 4 eggs
  • 100 ml white wine
  • 100 ml olive oil
  • 1/2 teaspoon salt
  • ground black pepper
  • 250 g loose flour
  • 1 about chemical yeast
  • 150 g pitted olives
  • 4 slices of ham
  • 200 g grated emmental cheese
Preparation (90 minutes approx.): 1. Heat the oven to 170ºC. 2. Separate the yolks from the whites. 3. In a large bowl, blend with a blender: the egg whites, the wine, the oil, the salt and the pepper. 4. Add the flour and baking powder and blend. The dough should be sticky and elastic. If the blender does not have enough strength, sift the flour and yeast and incorporate it by hand with a spatula or whisk. 5. Whip the egg whites until stiff. With the help of a silicone spatula, mix 1/3 part of the egg whites with the dough. 6. Add the olives and ham and mix. Add half of the egg whites and mix well. 7. Add the grated cheese and the rest of the egg whites. Mix everything with the spatula until all the ingredients are well incorporated. 8. Grease a plum cake mold with oil and pour the dough evenly. 9. Bake for about 60 minutes or until a toothpick inserted into the plum cake comes out clean. 10. Let the plum cake cool before unmolding it. Enjoy!
