GREEN SOY AND STRAWBERRY SALAD RECIPE

Ingredients (2 servings)
  • 80 g green soybeans
  • Sprouts for salad or various lettuce
  • Strawberries
  • Pinions (optional)
For the vinaigrette:
  • 4 tablespoons extra virgin olive oil
  • 2 teaspoons black olive and apple jam
  • Pepper mix
  • Salt (optional)
Preparation (12 hours soaking + 15 minutes preparation.): 1. Soak the soybeans overnight (8 hours in this case). 2. The next day, put the soybeans in a pot with mineral water and bring to a boil. Once it starts to boil, let it cook for 10 minutes with a little salt. (The cooking time of green soybeans varies depending on the soaking time and the size of the soybeans, in this case the grains were small in size, about 4 mm long). 3. Drain and wash the soybeans with cold water. Let cool. 4. Wash the sprouts and strawberries. 5. Cut the strawberries and assemble the salad with the soybeans, sprouts and strawberries to our liking. 6. For the vinaigrette, mix the oil with the jam and mix well.
