Lupines are legumes of a bitter variety native to the Mediterranean region. Its shape is a flattened seed with unmatched protein value in which fibers, proteins, folic acid and a low proportion of glucose stand out. It is an ideal dish to start diets due to its great satiating effect, it also reduces cholesterol and for people with diabetes it is ideal because it stimulates insulin secretion.
The taste of dried lupins is bitter, so its main use was related to animal feed. However, recently and due to the evolution of research, lupins have become part of people's diets and especially in the diets of high-performance athletes.
To eliminate the characteristic bitter taste of this seed, it is subjected, on several occasions, to immersion processes in salt water. Its process is rigorous and you must test its degree of bitterness daily. Remember that this is a process that takes time. You must have at least a week for its preparation.

LIPINS
Ingredients
- 400 g dried lupins
- water
- salt
- seawater
Preparation (9 days approx.):
1. Wash the dried lupins and discard any with dark spots.
2. Soak them for 24 hours. The water level should exceed the lupins by about 4 fingers.
3. Repeat this process one more day.
4. On the third day, drain the lupins and boil them for about 15 minutes.
Once boiled, drain them and rinse them well with cold water until they have cooled.
5. Cover the lupins again with water and add a little salt. After 24 hours, drain the lupins and repeat the soaking process with salt for about 5 more days (changing the water every day).
6. From day 7 onwards, taste the lupins daily to check the level of bitterness and salt.
7. On day 9 the lupins should no longer be bitter, if so, repeat the soaking process until the bitterness has disappeared.
8. When the lupins are no longer bitter, rinse them well, put them in glass jars and cover them with
sea water.
9. Store in the refrigerator.
