THAI RICE NOODLES

Ingredients (2 people)
  • 1 block of tofu
  • soy sauce (optional)
  • 160 g rice noodles
  • 1 clove garlic
  • 2 small shallots
  • 1 bird's eye cayenne
  • 2 eggs
  • oil
  • salt
For the sauce:
  • 4 tablespoons soy sauce
  • 3 tablespoons of ground panela
  • 2 tablespoons of vinegar
To end:
  • chive
  • roasted peanuts
Preparation (30 minutes): 1. Mix all the sauce ingredients and set aside. 2. Bring water to a boil with a little salt. Turn off the heat and add the rice noodles. Let them soak in the hot water until they are soft (about 10 minutes). 3. Meanwhile, cut the tofu into cubes and fry it with a little oil. Reserve it. To give it more flavor, you can marinate the tofu with a little soy sauce before frying it. 4. Chop the shallots and garlic. Sauté it together with a bird's eye cayenne. 5. Add the rice noodles and fried tofu. Mix well, add about 4 tablespoons of water and cook for a minute. 6. Make a hole in the center of the pan.
