Agar-agar and seitan salad is popular in the vegan community. Its high nutritional power and its low cost compared to the price of traditional proteins have made this salad a fresh, healthy dish and preferred by vegetarians. Agar-agar is a word that means jelly and it is a gelatinous substance that is obtained from several species of algae. It has also become known as vegetable gelatin, widely used in China, Japan and Korea and entered Europe in the mid-19th century. Today it is easy to find on the market in the form of strips and is used as gelatin in desserts and also as a thickener in pudding, flans, sauces and cakes. While seitan is made from wheat gluten, it is a meat substitute that provides calcium, iron and magnesium to the body. It can be made in the form of meatballs, stews or batter. In our recipe today we will learn how to combine these delicious exotic flavors in a highly nutritious salad. Take a pencil and paper so you can write down all the ingredients and the procedure we will use. Let's get started! AGAR AGAR AND SEITAN SALAD Ingredients (2 people approx.)
  • 10 agar agar strips

  • spinach sprouts
  • Cherry tomatoes
  • carrot
  • 1 piece of seitan
  • black sesame
  • For the vinaigrette:
  • 2 tablespoons of water
  • 1 splash of lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon orange blossom honey
  • 1 teaspoon peanut butter without salt or sugar
  • 1 pinch ginger powder
  • 1 pinch ground black pepper
Preparation (30 minutes approx.): Vinaigrette: In a glass, mix all the vinaigrette ingredients. Beat the mixture well with a fork and set aside. Salad: 1. Cut the agar agar strips and cover them with water. Reserve. 2. Wash the lamb's lettuce, spinach, tomatoes and carrot. Cut the tomatoes in halves, peel the carrot and cut it into slices. Reserve. 3. Cut the seitan into slices. 4. Heat a frying pan with a splash of oil and place the seitan pieces. Sprinkle black sesame on top of the seitan and turn it over. Repeat this step and reserve the seitan. 5. In a large bowl, put the lamb's lettuce, spinach, tomatoes, carrot and drained agar agar. Pour the vinaigrette and mix well. 6. Cut the avocado and put it on top of the salad. Place the hot seitan pieces in the center of the salad. Enjoy!
