This recipe is one of the emblems of Ecuadorian gastronomy and has a clear Chinese origin. Chaulafan is a fried rice dish (similar to rice 3 delicacies) and of which we can find many varieties. We have opted to prepare a chaulafan with chicken, small pieces of York ham and shrimp. This dish is very easy to make and we can adapt it according to our tastes and availability of ingredients. Ingredients (2-3 servings)  
  • 140 g long rice
  • 1 carrot
  • 1 handful of frozen peas
  • 1 egg
  • 1 onion
  • 2 cloves of garlic
  • 2 chicken breast fillets
  • York ham cubes
  • 10 cooked shrimp
  • chive
  • soy sauce
  • oil
  • salt
  • pepper
Preparation (45 minutes approx.): 1. Boil the rice with a little salt for about 10 minutes. Drain and rinse with cold water to stop cooking. Reserve. 2. Peel and chop the carrot. Boil the carrot along with the peas until tender. Drain and reserve. 3. Make an omelette with one egg and set aside. 4. Chop the onion and garlic cloves and sauté. When the onion is transparent, add the chicken fillets in pieces and the ham cubes. Add a little salt and pepper. Cook for about 5 minutes or until the chicken is cooked. 5. Add the carrot, peas, chopped chives and already cooked prawns to the sauce and mix well. Cook for about 2 minutes. 6. Increase the intensity of the heat a little so that the pan is very hot. Add the chopped tortilla, boiled rice and soy sauce. Stir the whole thing for a couple of minutes and serve. Enjoy!
