A tradition that reaches the kitchen since it is typical that the famous Sant Joan coca is made during these days. Have you tried making it at home?   • 50 g milk
  • 7 g dry yeast
  • 250 g strong flour
  • 1 pinch of salt
  • 40 g sugar
  • 50 g water
  • 50 g soft butter
  • 1 egg
  • Lemon zest
  • Anise splash
  • Cinnamon powder
To decorate: ELABORATION:
  1. In a glass, mix the yeast with the hot milk and let it rest for about 10 minutes.
  2. In a large enough bowl, mix the flour, salt, sugar, water, softened butter and milk with the yeast.
  3. Mix and add the egg.
  4. Next, add the lemon zest, anise and a pinch of cinnamon powder.
  5. Knead until the dough is smooth and homogeneous.
  6. Next, form the dough into a ball, spread it lightly with oil and cover it with a damp cloth until it doubles in volume (approximately 1 hour).
  7. Put a little oil on the work surface and stretch the dough into a coca shape.
  8. Decorate the coca with candied fruit.
  9. Paint with beaten egg and water.
  10. Finish decorating with pine nuts, sugar, chocolate chips, etc.
  11. Cover the coca with a cloth and let it ferment until it doubles in volume (between 1 hour and 1 and a half hours)
  12. Cook the coca at 180ºC for about 15 minutes.
