Healthy filled cookies
Ingredients:
For the solid part:
A glass of oat flour (120g)
A glass of chickpea flour (130g)
A tablespoon of pure cocoa
A teaspoon of baking powder
For the liquid part:
One peeled banana (113g)
5 tablespoons EVOO (extra virgin olive oil)
6 tablespoons birch sugar
a pinch of salt
Stuffed:
2 tablespoons cashew cream
A teaspoon of agave syrup
A pinch of cinnamon
Elaboration:
Mix all the ingredients for the liquid part in a bowl.
Add all the ingredients for the solid part and mix again until everything is homogeneous.
Roll out the dough on a flat surface and cut out 22 cookies with a square cutter.
Put the cookies on a tray with baking paper underneath and put them in the oven (already preheated) for about 17 minutes at 180°. Then let them cool on a rack.
For the filling, mix the cashew cream with the agave syrup and cinnamon.
Take a cookie, spread a little of the filling and cover it with another cookie
Do the same with the rest.
