In a pot with water, a pinch of salt and a splash of oil, we cook the rice for the time indicated by the manufacturer on the package. 2. Chop the zucchini and onion. 3. Pour a splash of oil into a frying pan and lightly brown the onion. Next, we add the zucchini, edamame, peas and chopped garlic and parsley. We cook until the zucchini changes color. 4. Then we add the rice (already cooked), the nutritional yeast, the salt, the nori seaweed and sauté everything for a couple more minutes.
5. We plate the rice and decorate with flaked nori seaweed on top.
