Nero rice with vegetables and chicken

For today's recipe we have a luxury protagonist, it is nerone rice. A type of rice that was preserved for many years especially for the nobility due to its extraordinary qualities as a healing, nutritious and aphrodisiac food. So it is a very romantic dish and ideal for special dinners.

This is not a traditional rice that turns black due to the broth being dyed by squid or any other coloring ingredient. In addition, it emits a light nutty perfume that decorates any type of dish. You have to be very careful when cooking since it is a little different from traditional rice and very similar to brown rice. You will need approximately 50 minutes to get it to the perfect touch.

You can combine this rice with a large amount of meats and vegetables, but for today's recipe we have selected chicken and vegetables that will give a perfect color contrast to the dish such as carrots, peppers, asparagus, leeks and shallots. NERONE RICE WITH VEGETABLES AND CHICKEN

Ingredients (4 servings approx.)  
  • 250 g nerone rice
  • mineral water (you need 3 parts water to 1 part rice)
  • 1 carrot
  • 1 leek
  • 3 shallots
  • 1 pepper
  • green asparagus
  • 1 chicken breast fillets
  • salt
  • black pepper
Preparation (1 hour approx.): 1. Wash the rice and boil the water with a little salt. 2. When the water boils, add the rice and let it cook for about 50 minutes, making sure the water does not evaporate too quickly. Stir occasionally. 3. Wash, peel and chop the vegetables. Put a splash of oil in a frying pan and fry the vegetables over low heat. Add a little salt. 4. Cut the chicken fillets into pieces and season with salt and pepper. 5. When the vegetables begin to become tender, add the chicken and fry for about 5 more minutes. 6. Correct salt if necessary. 7. Serve the rice and the sautéed vegetables and chicken on top. Enjoy!
