Beans, a fundamental food for a healthy diet

The plant species Phaseolus vulgaris is responsible for providing us with a type of delicious and healthy legume, beans . These are one of the oldest foods known to humans and since their domestication as a crop plant they have been part of the gastronomy of almost all cultures in the world.

Beans are also legumes rich in carbohydrates, especially starch. They contain saturated, monounsaturated and polyunsaturated fats, the proportion of the latter being slightly higher than the previous two.
On the other hand, this food is an excellent source of vitamins, since its components include retinol or vitamin A, thiamine or vitamin B1, riboflavin or vitamin B2 and niacin or vitamin B3, as well as vitamin B6. In addition, beans provide a large amount of folic acid or vitamin B9, necessary for the synthesis of structural proteins and hemoglobin, among many other functions.

Folic acid is especially important in pregnant women, as it prevents the occurrence of congenital malformations.

Therefore, beans should not be missing from the diet of any woman of childbearing age, especially if she is trying to conceive or is already pregnant.
